I made Pineapple Curry for the first time tonight.
Luxurious.

Wow. This looks fantastic. I actually have a pineapple on hand. Care to share to the recipe? :)

Pineapple curry is my favorite Thai dish so I basically just tried re-creating the recipe from what I get at Green Leaves restaurant in Silverlake.
I used:
3 green onions
handful of cilantro, rinsed then chopped
4 basil leaves
1 clove of garlic
1/2 tsp of grated ginger root
zest of 1/2 small lemon
1Tbs of Thai Kitchen red curry paste
2 cups of low-fat coconut milk
1 cup cubed pineapple
1 cup diced tomatoes
mushrooms
green and red bell pepper
canned bamboo shoots
1 tbs of brown sugar
salt to taste
I fried the green onion, garlic, cilantro, basil in a little bit of oil in a large sauce pan then add the grated ginger gave it few minutes, tossed in bell pepper, mushrooms and tomatoes. Sauteed for 5 minutes. Then I added the coconut milk and curry paste, making sure it thoroughly dissolved.
Next I added the pineapple and bamboo shoots and let it simmer for 15 minutes. I added the sugar and salt to taste. I even added a little water as I went. Oh and the tofu I added during the last five minutes.
Hope my measurements were accurate! It really all depends on how spicy or sweet or creamy you prefer it.
